Originally the way the Wing-Off ran is that if a Wing won a battle, they faced a new challenger on the next round. It was designed much in the way that a Championship Belt changes hand in boxing. But ultimately we felt that there were more amazing Wings to eat out there and decided to change to a bracket style challenge so that we could eat Wings at different places.
Along with that, Scruffy Duffy’s, the original Wing-Off Champ had closed and now their Wings were only available at Lansdowne Road. We had this ceremonial eating of the Wing to effectively retire Scruffy Duffy’s jersey in the best Wings in NYC Hall of Fame.
